Jul. 27th, 2006 07:32 pmOkay, I have to apoligize in advance, but I'm going to be spamming your friendslist tonight, I have a lot of separate things that need to be posted and I have to complain about today first.
Number one, the latest GI virus that's been going around hit my sistet Sara badly. This means large amounts of very stinky diapers that absolutely have to be changed the instant she goes or they'll leak. Lovely, really. Mom and I both caught a much milder version of it, thankfully.
Number two, incredibly cranky kids today, and it was raining all day so we couldn't take them for a walk or let them go outside to play. I managed to keep from killing them by setting them up to do their favorite game, hugging each other, because they're cute enough doing that that I'd start to remember why I liked them so much. Then they turned around and started hugging me non-stop, which worked to keep them busy and me happy until Mom came back and I could flee down to my nice quiet bedroom.
Number three, I managed to get ahold of my potential roommate for school, only to find out after I'd taken the initiative to discuss things with her and figure out some of the main potential conflict areas as well as who would be bringing what with them, that she was considering not going back to E-ville in the fall. This would leave me roommateless for the third time in as many years there. I swear, if we could afford it, I'd take a single room just to avoid this hassle every year. It almost makes me wonder if there's some aspect of my personality that makes me a bad roommate, but I've only really had personality issues with one of my roommates, the second one I had my freshman year, and she had major issues of her own.
Okay, enough griping. I do have one really good thing that happened today, I figured out a new marinade/recipe that tasted wonderful. If you're interested, it goes as follows:
1 cup chicken broth
1/4 cup lemon juice
1/4 cup honey
a shake or so of onion flakes
1 teaspoon or so of garlic
1/4 teaspoon rosemary
1/4 teaspoon sage
1/4 teaspoon thyme
1 or two fresh sweet basil leaves, chopped
leaves from one sprig of mint, also chopped.
Mix all of these together and heat until the honey has completely dissolved into the rest of the ingredients. Pour over thawed chicken pieces and store in a sealed container for about four/five hours. Then pull out the chicken pieces, dredge them lightly through flour, and set them on a hot cast iron skillet to cook until doneness. Place chicken pieces on a plate and pour the marinade into the skillet. Mix in the flour used to dredge the chicken, and stir gently until the sauce thickens. Serve over rice.
It's delicious, and because of the lemon, the honey, and the rice, it's a very good recipe to serve when you've got a slightly queasy tummy.
