Sep. 2nd, 2008 11:16 pmDad is off being a boy-scout this week. He's been bouncing for these past few weeks in anticipation for this week's training session, as he's helping to plan and run it. Apparently, there's an Olympic theme going on, which includes as part of it my father and another man dressed up in Greek chitons and jokes about Thor coming down and vacationing as a Greek god to avoid Scandinavian winters.
Therefore, Mom and I are enjoying a chick-food week. Although tonight's meal actually would be something Dad would probably enjoy, actually. It did include at least one form of meat, after all. We experimented with dried tomato and feta stuffed chicken, and it worked out rather well, especially when I made up a wine sauce as an afterthought. True, the spinach salad side wouldn't have been as much to his taste, he doesn't seem that fond of spinach to begin with.
The other big event today was that I went in to observe a class at one of the local massage therapy schools. Overall, I thought the teacher was excellent, and I'm definitely leaning towards this school. I want to do a bit more reflection before I make my final choice, but they've definitely become my favorite. The other available school just has a very arrogant vibe to it that I didn't enjoy.

senashade, you definitely made an impression when you visited. It's been a year, and Mom and I are still wandering around and noticing things that make us think of you. We ran into two such things in the past three days, which probably means we're missing you and want to see you again. Stop by sometime, and bring
lady_tigerfish with you, would you? It's only a trip across the majority of the country to visit, after all.

Date: 2008-09-03 12:18 pm (UTC)You need enough chicken breasts for everyone you're feeding,
crumbled feta cheese,
sun-dried tomatoes,
salt, pepper, and a few herbs to taste to season the outside of the chicken breasts,
a cast-iron skillet,
and a bottle of red wine.
1. Half-thaw the chicken breasts, and slit them along the sides to create a pocket.
2. Finish thawing them out.
3. Stuff each chicken breast with a few dried tomatoes (ours are dried from out of our garden, so they're on the small side and we used two and a half for each breast).
4. Add in a bit of feta cheese and close the pockets.
5. Season the outsides with salt, pepper, and herbs of your choice.
6. Grill in a hot skillet until thoroughly cooked.
7. Deglaise the skillet with a splash of wine.
8. Add a pinch of flour to thicken the sauce slightly. You still want it rather runny.
9. Pour sauce over chicken, serve next to a spinach salad for maximum yumminess.
Mom would like your bribe at any point in the near future. Me, I'm wondering if I could talk you into it being half chocolate raspberry, half chocolate and hazelnut fudge.
