Mom and I experimented a bit tonight, and we've come up with something rather fantastic and incredibly easy.

Mushrooms 1
1 package sliced portabella mushrooms
1 hefty dollop mustard
1 splash wine
herbs of your choice, we did rosemary, thyme, and a bit of minced dried onions

1. Combine the mustard and wine until it forms a thick liquid, then add in the herbs.
2. Lay the mushrooms on a cookie sheet.
3. With a spoon, spread a thin layer of the mustard sauce over the mushrooms.
4. Broil until the mushrooms have released some juices and started browning.

Mushrooms 2
1 package sliced portabella mushrooms
1 bottle of teriyaki sauce

1. Lay the mushrooms out on a cookie sheet.
2. splash a few drops of teriyaki onto each mushroom, brushing with your fingers to spread over the top surface of the mushrooms.
3. Broil until lightly browned and juices release.

Delicious.

Yep. Dad had meetings the past three days over the dinner hour. So we've had vegetarian curry, mushroom-barley soup (okay, I think he had some of that when he got home, and he likes it anyway), and last night's mushrooms with bruschetta on the side.

I'm experimenting tonight as well.

We decided to have chicken, but couldn't decide how to have it.

So I did pretty much everything.

I heated olive oil in a pan and "cooked" some kosher salt, lemon juice, Italian seasonings, cracked pepper, and lemon pepper. Then I put all of those things on the individual chicken breasts. Then added the chicken to the pan. Then, for the heck of it, I added some blackening seasoning and some Old Bay seasoning to the chicken. Since it didn't finish cooking in the pan, I threw it in the oven.

If Gordon Ramsay were in my kitchen, he would have just thrown a shitfit.

We haven't tried it yet and, I admit, it looks and smells fairly good, but...let's just say thank goodness we've got a box of cajun shrimp in the freezer.

Your mushrooms sound awesome, especially the second type. I might have to steal that idea. :D

Sounds yummy. Specially the teryaki. :) Makes me think about trying it with sweet chilli or hoisin or GINGER YUM now too.
