Oct. 22nd, 2010 11:26 pmOn chilly gray Fridays, when you have two small children to entertain, baking is the best solution I've found. Mom tends to agree with me. Besides, we needed to make cookies, and I'd been planning on making a pumpkin pie for the party I'm going to tomorrow anyway.
So, this morning was spent putting together chocolate cookie dough and a modified graham cracker crust. From an initial taste-test, my modification was a success, and I'm never making it with plain white sugar again, because brown sugar adds a wonderful caramelized flavor to the crust.
This afternoon was spent baking up the cookies, and putting together/baking the pumpkin pie. Which my family has been making in graham cracker crusts for about 4-5 years now, since Elizabeth first experimented with it and we found out how marvelously it worked.
And then for dinner we tried out this egg dish, with spinach in place of the swiss chard, and homemade herb bread cubes instead of the ciabbata cubes. Another definite success, and one that I could easily size down by half or a third for making for myself/one other person.
